Try one Almond Cookie Recipe of the many delicious recipes we have to offer. These homemade cookies are highly reccomended and of high quality.
These cookies are great with a cup of coffee or tea. Although if I had my choice from one of these delicious dessert recipes I would definitely go for the Mocha Almond Cookies, they are by far my favorite Almond Cookie.
1 cup all-purpose flour
1/4 teaspoon baking powder
1 egg
1/2 cup butter, softened
1/2 cup white sugar
1/2 cup ground almonds
3 teaspoons International Mocha
2 teaspoons water
Preheat to 375
1. Mix International mocha and water in a small bowl.
2. Stir together flour, ground almonds, baking powder in a separate bowl.
3. In a mixing bowl cream butter and sugar at medium speed of electric hand held mixer.
Beat in egg and mocha mixture.
4. Stir flour and ground almond mixture into the creamed mixture.
5. Drop by teaspoonfuls 2 inches apart on un-greased cookie sheets.
6. Place 2 blanched sliced almonds in center of each cookie.
7. Place cookie sheet with dough on it in fridge for 20 min.
8. Bake at 375° for about 7 to 10 minutes, or until set and very lightly colored.
Makes about 3 dozen.
Preheat to 325
1. In a large bow mix the flour, baking powder, baking soda, and salt.
2. In a medium bowl, use an electric mixer to beat the butter or margarine, shortening, and sugar.
3. Add the egg, water and almond extract and beat until well blended.
4. Slowly beat in the flour mixture.
Note: The dough will be very thick at this point, but don't worry - that is what it's supposed to be like.
5. Form into 1-in. balls and place on a cookie tray with parchment paper over the tray, 1 inch apart.
6. Place an almond in the center of each cookie and press down lightly.
7. Brush each cookie lightly with beaten egg and 1/2 tsp almond extract before baking.
8. Bake for 17 minutes to 20 minutes, until golden brown.

1/3 lb softened butter
1/2 c flour
1/3 c sugar
1 1/4 c ground almonds
1/4 tsp vanilla extract
Preheat oven to 350
The mixture will be very sandy.
1. Cream butter, vanilla and sugar in a mixing bowl.
2. Mix in almonds.
3. Gradually mix in the flour.
4. Roll out on a flat surface, try not to mix in too much flour.
5. Cut them with a cookie cutter, try to cut them as close together as possible. The more you have to work the dough the more the flour mixes in with the dough and the tougher and more flour tasting it will get.
6. Bake on a cookie sheet for 10-12 minutes or until a beige color.
Makes 1 - 1 1/2 dozen depending on the cut.
1 tsp vanilla extract
1 c butter
1/2 c confectioner sugar
2 1/8 c flour
1 c chopped almonds
confectioner sugar for rolling
Preheat oven to 350 degrees.
1. Cream butter and sugar.
2. Add vanilla and beat in the flour.
3. Mix in the almonds.
4. Chill dough for 45 minutes.
5. Roll into one inch balls and place on a cookie sheet lined with parchment paper one inch apart and bake for 15-20 min minutes
6. Roll in confectioners sugar while still warm, after cooled roll in confectioners sugar again.
Makes 2 Dozen.
2/3 c almond butter
2 tsp maple extract
1/4 c brown sugar
2 tbs vegetable oil
1 tsp vanilla extract
1 1/8 c all purpos flour
1/4 tsp baking powder
1/4 tsp salt
1/2 c chopped almonds
1/2 c oatmeal
1 egg
Preheat oven to 350.
1. Mix flour, baking powder, salt and chopped almonds in a large bowl.
2. Mix maple syrup, egg, almond butter, brown sugar, oil and vanilla in a separate bowl.
3. Slowly beat the dry ingredients into the wet ingredients.
4. Beat in the oatmeal.
5. Roll into 1 inch balls and place on a lightly greased cookie sheet 2 inches apart.
6. Bake for 8 - 10 minutes or until golden brown.
2 1/2 c sweetened coconut
2 1/2 c milk chocolate chips
1/2 c butter
3/4 c white sugar
3/4 c brown sugar
2 eggs
1 tsp vanilla
1 tsp almond extract
2 1/4 c all purpose flour
1 tsp baking soda
1/2 tsp salt
1 c sliced almonds
1. Combine dry ingredients in a bowl, (flour, baking soda and salt.)
2. In a large bowl cream the butter, white sugar and brown sugar.
3. Add the vanilla and almond extract, beat in one egg at a time.
4. Slowly beat in the dry ingredients.
5. Beat in the almonds and coconut.
6. Mix in the Chocolate chips.
7. Use a teaspoon and drop rounded teaspoon fulls of the cookie dough onto a very lightly greased cookie sheet.
8. Bake 8 - 9 minutes.
9. Let them cool before putting them on a wire rack, if you try to take them off while they are hot they will fall apart.
